The organized sector contributes ₹2,500 crore, while the significantly larger unorganized sector accounts for over ₹7,500 crore. Chennai alone commands 50% of the market share.

This culinary powerhouse boasts a diverse range of styles, including Chennai Muslim biryani, Kongu biryani, Chettinad biryani, and variations from Ambur and Dindigul. Prominent players like Dindigul Thalappakatti, Junior Kuppanna, Buhari, and Anjappar, alongside numerous smaller establishments and countless street vendors, contribute to the widespread availability of this beloved dish.

Dindigul Thalappakatti, with 65 outlets, sells an impressive 5,000-6,000 kg of biryani daily, a figure that fluctuates depending on the day of the week and festive occasions. Junior Kuppanna, another major player, sells around 1.2 million biryanis annually. Even smaller operations like Mount Road Bilal prioritize quality, preparing small batches every two hours to ensure freshness.

Pricing varies drastically, ranging from ₹100 for a roadside chicken biryani to over ₹1,600 for premium restaurant options. Mutton biryani consistently remains the most popular choice, though chicken offers a more budget-friendly alternative. The Taj Coromandel’s Gilli Biryani also maintains a strong presence, selling 60-70 portions daily.

The biryani craze extends beyond restaurants. Swiggy data reveals Chennai residents ordered 4.61 million chicken biryanis in 2024 alone, with one individual placing a remarkable order of 66 biryanis in a single transaction. This surge in demand has also fueled the growth of related businesses, with biryani kit startups like Cookd selling 30,000 kits monthly and masala brands developing new biryani spice blends.
