Lingering Monsoon Threatens India’s Beloved Vadiyalu Production
November 20, 2025 – The extended monsoon season and unusually high humidity are disrupting the production of vadiyalu and appalam, the traditional sun-dried lentil balls and papads beloved in South Indian meals. These artisanal crisps, handmade by farming families, rely on consistent sunlight for proper drying, a condition the current weather is failing to provide.
Vadiyalu are a vital part of home cooked South Indian Meals. Unlike mass-produced fryums, vadiyalu are handcrafted with minimal processing, offering a unique taste and texture. The prolonged lack of sunshine is causing production delays, storage problems, and even fungal growth, leaving consumers facing potential shortages.
Some producers are adapting by making smaller batches or switching to alternative dishes. Innovation is also underway, with some people attempting to develop solar dryers. This solar dryer uses a transparent cover to allow sunlight to enter, and a black surface to convert the sunlight to heat. Vents allow air to flow through, carrying moisture out.
Experts estimate production is down around 30% and there is a shortage in supply. The fate of these traditional crisps remains uncertain until the sun returns in full force.
