**Chi-Chi’s Mexican Restaurant Announces Comeback, Opening First U.S. Location in Over 20 Years in Minnesota**
**ST. LOUIS PARK, MN** – Iconic Mexican restaurant chain Chi-Chi’s is making a triumphant return to the U.S. market, with its first location in over two decades slated to open in St. Louis Park, Minnesota, on Monday, October 6th, at 11 AM local time. Located at 1602 West End Blvd., the new restaurant promises a “refreshed design” and a menu blending original favorites with exciting new offerings.
Michael McDermott, son of Chi-Chi’s co-founder Marno McDermott, expressed his enthusiasm for the relaunch: “We’re back stronger than ever, bringing back the food, energy, and fun that people love, now with a fresh twist for a whole new generation.”
The menu will feature classic Chi-Chi’s items like the Nachos Grande, the original Chimichanga, and seafood enchiladas. New additions include Quesabirria Tacos served with consommé dipping sauce, and a Manchego Burger made with grilled angus beef, manchego cheese, pico de gallo, avocado, and chipotle mayonnaise.
The St. Louis Park location will serve as a flagship for the company’s relaunch, with plans for further expansion in the future. According to Chi-Chi’s, the St. Louis Park location will feature a more modern decor and an “inviting ambiance.”
The company’s resurgence comes after a challenging period, including a 2003 bankruptcy filing and the closure of its last U.S. restaurant in 2004 following a foodborne illness outbreak. Chi-Chi’s announced in December 2024 that it had reached an agreement with Hormel Foods, a Minnesota-based global food company that owns Chi-Chi’s trademarks, to use the name and open future locations.
Chi-Chi’s has garnered significant support for its comeback, raising over $2.3 million from over 2,000 investors through an equity crowdfunding campaign on StartEngine.com.
