BENGALURU, INDIA – March 15, 2025 – Michelin-starred Bangkok restaurant Bo.lan, renowned for its focus on local Thai produce and sustainable practices, is hosting a three-day pop-up event at The Oberoi, Bengaluru. Chefs and owners Bo Songvisava and Dylan Jones, who met while working in London, are bringing their unique interpretation of regional Thai cuisine to the city.
Bo.lan, which opened in Bangkok in 2009 and earned a Michelin star in 2017, emphasizes slow food and preserving Thai culinary heritage. Their Bengaluru menu features dishes like southern-style grilled lamb and kho raat-style curry, showcasing the diversity of Thai regional cooking styles, similar to the variety found in India’s north and south. The chefs highlight “krueng Jim,” a style of chili relish served with cured meats and local vegetables, as a quintessential example of Thai cuisine’s seasonal variations.
The restaurant’s commitment to sustainability is a core element of its philosophy, with a zero-carbon footprint goal achieved through utilizing kitchen scraps and working closely with local farmers across Thailand. Chefs Bo and Dylan emphasize the symbiotic relationship with their suppliers, stating that the farmers’ support is crucial to their menu’s success.
During their stay, the chefs plan to explore Bengaluru’s culinary scene, expressing interest in visiting local restaurants like Malgudi Mylari (dosas) and Nagarjuna (biryani). The pop-up dinner is priced at ₹15,000 plus taxes per person and runs from March 14th to 16th.
