HYDERABAD, INDIA (January 31, 2025) – Renowned chef Suresh Pillai, known for his blend of traditional Indian flavors and modern techniques, is bringing his unique culinary vision to Hyderabad. Pillai, who currently operates several restaurants across India, including the popular Restaurant Chef Pillai (RCP) in Bengaluru, recently concluded a two-day pop-up at The Leela Hyderabad. The pop-up, titled “Spices and Stories: Kerala Reimagined,” showcased his signature dishes, emphasizing love and simplicity as key ingredients.

Pillai’s culinary journey began humbly, chopping onions at age 16 after abandoning his pre-degree studies. His talent propelled him through various kitchens, culminating in a role at the Michelin-starred Veeraswamy in London and a memorable appearance on BBC MasterChef. His experience spans England, Australia, and the Caribbean, where he also mentored culinary students.

The chef’s Hyderabad pop-up offered a taste of his innovative dishes, which seamlessly fuse tradition and modernity. Highlights included Sambharam kadumanga pani puri and inji puli chicken wings, demonstrating his expertise in blending traditional spices with unexpected twists. Pillai confirmed plans to open a permanent restaurant in Hyderabad this year, citing the significant number of Telugu patrons at his Bengaluru establishment. His restaurant empire also includes Kothu Xpress and the soon-to-launch North Rasoi. Pillai describes his food as “a blend of traditional flavours with modern elements. Authentic, with a glimpse of fusion here and there.”
