Thu Oct 31 22:12:25 UTC 2024: ## Coimbatore Chef Creates Over 2,500 Oil-Free, Boil-Free Recipes for Healthy Festive Meals
**Coimbatore, India (October 31, 2024)** – R Sivakumar, known as Padayal Siva, has revolutionized Indian cuisine with over 2,500 recipes that are completely free of oil, boiling, roasting, and frying. His innovative techniques allow for healthy and delicious festive meals, even for children who love sweets and snacks.
Siva’s “Padayal” method, based on soaking, mixing, binding, and grinding, utilizes natural ingredients to achieve flavorful results. For example, soaking raw banana in lemon water removes astringency and makes it edible, while mixing ingredients releases natural oils.
“Many natural ingredients are sources of oil,” Siva explained. “If I add coconut, it naturally releases oil into the dish. We use nut powders for binding, and by mixing the ingredients by hand, the natural oils release.”
Siva’s no-oil, no-boil restaurant in Coimbatore opened in 2023, showcasing his unique recipes. He also teaches these techniques through his Padayal Academy, which started in 2013 and has catered to over 25 weddings and other events.
Siva’s methods are accessible, requiring no specialized equipment. He utilizes traditional kitchen tools and local produce, making his dishes quick to prepare. He also incorporates heritage rice varieties, transforming them into poha for his signature oil-free idlis.
In addition to traditional Indian dishes, Siva’s restaurant and courses offer diverse options like noodles, cutlets, and fried rice. He uses a variety of greens and even flowers in his creations, demonstrating the versatility of his approach.
Siva credits his inspiration to Satvik food practices and the teachings of Nammalvar and Nel Jayaraman. His work offers a unique and healthy way to enjoy traditional Indian flavors, making it a valuable contribution to the culinary world.
