MasterChef judge and culinary expert Volodymyr Yaroslavskiy recently shared a recipe for a quick and easy Jerusalem artichoke soup on Instagram. Here’s how to make it:
1. Peel and slice the Jerusalem artichoke and place in a pot of cold water.
2. Chop bacon and fry over medium heat.
3. Dice an onion and add to the bacon, frying until golden brown.
4. Add chopped Jerusalem artichoke and fry for 5 minutes.
5. Pour in wine and evaporate it before adding broth. Cover and cook for 40 minutes.
6. Blend the mixture until smooth and strain through a sieve.
7. Return the mixture to a saucepan, add cream, salt, and stir well.
Serve the soup garnished with olive oil for a delicious and nutritious autumn meal.
